Here they're just mocking it up in these pictures to see what the fitment will be like. This way they can know how much fender work and/or how much tire stretching is needed to make them work. Also both wheels look rather expensive so they probably have a bit more to save before they can afford the rubber too.

What's a small sidewall to you? Small sidewalls allow you to corner with less tire roll.

I agree with you on 2 out of 3. Many new cars come with wheels are too large in diameter, with sidewalls that are too thin. This makes the wheels heavier than they need to be, which combined with the stiff low-profile sidewalls, makes for a crashy ride.
But wider wheels/tires (without also going up in diameter), are a good thing for performance cars.

Yes, but the key word is for performance cars. I have NO problem with such cars having performance tires.
But your average Fiesta/Yaris/Focus/Corolla/Camry/Accord/Cruze does NOT need low profile tires on huge dubs.
The Smart and Spark could easily have 12/13-inch wheels with no problem
The non-ST Fiesta, no-RS Cruze, Fit could also get by with 13's and 14
14-15 inches for the non-ST Focus, non-speed 3, Cruze, non-Si Civic
For example, my 96 ES300 (V6 Camry) has 205/65-15 tires (and so did the Avalon). The 4-cyl Camry of the time came with 195/70-14. These cars weigh 3000-3500 lb. If those sizes were good enough for the best car ever made, they're perfectly fine for today's small and midsize cars.

Our mustang sits pretty high and my friends have told me to lower it, the CS valance bumps crap all the time as is.

Less than 60% of the width is too small for a non-high-performance car. I don't like the low profile look, the ride they provide, or the higher tire prices either.
My 65-series tires are just fine. My tire size is 205/65-15, V speed rating. Falken just released a W-rated tire in that size a few months ago. It's called the Ziez ZE950 (but it wasn't out when I needed tires though). The ZE950, or any V-rated tire available in the size, has all the performance I need and then some.
In case you think I'm a poser getting high performance tires for my rebadged Camry, I had no choice because the OE speed rating was V and most tire shops won't install tires with a lower-than-OE speed rating even though I'd never ever approach those speeds (although the car's top speed of 138 mph does warrant the V-rated tires because H stops at 130).

Ha ha, well this is one of those cases where though the grass is green it isn't quite what you think on the other side of the fence, its fertilized with the blood and money.... Shes been a trip, turned me into an Audi Tech for sure, but I like to look at everything as an learning experience so I'll continue learning. Deff going to try and keep it for the rest of my life...nothing like hooning a wagon and taking the whole world by surprise.

I see your point. The larger wheels are mostly because of styling. But I don't think I would go back to quite as small of wheels as you're talking about. Partly because dinky wheels don't look so great, and bigger wheels make room for bigger brakes. Maybe 15-16" on compact cars, 16-17" on midsizers. That's within reason.
But instead, we have Dodge Journeys coming with 19" wheels.

The bigger brakes are fine on sports cars, but not necessary on most non-performance cars. The discs that fit inside my 15's are more than enough! Even though the ES300 has larger rotors than the Camry, the wheels are not.
I'm actually surprised not to see a return to smaller wheels in light of CAFE and generally wanting better mileage.
But like you said, people are most after the look.
